Ingredients
1tbsp. (heaping)potato flour
2tbsp.sugar
1cupfruit juice (from canned fruit) orIf using fresh fruit use a light or dark juice such as apple juice or cherry juice depending on the color you want the glaze to be.
Instructions
Mix the potato starch, sugar, and a few tablespoons of the fruit juice until completely smooth and no lumps remain.
Bring the remaining fruit juice to a boil. Slowly pour in the starch mixture in a thin stream, stirring constantly. Bring back to a boil and cook for about 30 seconds, stirring continuously, until the juice thickens and becomes gel-like.
Immediately spoon the glaze over the fruit and spread it evenly.
Notes
Tip: Potato flour will give you a clear glaze. If you use potato starch or cornstarch instead, the glaze will be more cloudy.
