Sauerkraut mit Speck
German Sauerkraut with Bacon
This sauerkraut recipe is a traditional side to German meat dishes. Serve it as a side with boiled potatoes to Rouladen or with bread dumplings to a crispy pork shank.

Ingredients
- 32 oz. sauerkraut
- 3 oz. bacon
- 1 medium onion
- 2 tsp. butter
- 1 tsp. garlic paste
- 1 ¼ cups beef broth
- 1 tsp. of salt
- 2 bay leaves
- 1/2 tsp. caraway seeds
- ¼ tsp. pepper
- 2 whole juniper berries
- 3 whole all spice
- 1 tsp. of sugar
Instructions
- Cut bacon and onion into small cubes and add to a medium sized pot.
- Add garlic paste and butter, and cook over medium heat for about 5 minutes.
- Add the caraway seeds and sugar and let cook for another 2-3 minutes.
- Add beef broth and spices.
- Bring to a boil and add the sauerkraut.
- Let simmer for about 1 hour.
Notes
You can prepare sauerkraut the day before, it is one of the dishes that tastes just as good or even better the next day.
